Strawberry chocolate mousse cake recipe


Strawberry chocolate mousse cake
CAKE (Thin slice. May want to double recipe if making a full cake)

110g all purpose flour
110g caster sugar
1½ tsp baking powder
a pinch of salt
40g unsalted butter
120g whole milk
1 egg (the egg I used was slightly larger = 63g)
Vanilla essence

1.     Line cake tin. Preheat oven to 170°C.

2.     Mix the flour, sugar, baking powder and salt together. Use a mixer to mix in the butter on slow speed until you get a sandy consistency and everything is combined.

3.     Pour in the milk (and vanilla essence) and beat on medium speed until all ingredients are well mixed.

4.     Add in egg and beat well on medium speed for 1½ minutes.

5.     Pour into cake tin and bake in oven (20cm/8” cake: 30mins).

6.     Leave on rack to cool after baking.

STRAWBERRY MOUSSE

300g strawberry chocolate (should use 150g, strawberry taste too strong/sweet)
450ml cold heavy cream

Strawberries, hulled & cut

1.     Melt the strawberry chocolate in a bowl in the microwave.

2.     Whip the cream until soft peaks form.

3.     Fold cream mixture into the strawberry chocolate.
