Apple cinnamon bundt cake |
Made: 1 bundt cake + 3 square muffins
300g all-purpose flour
1 tbsp ground cinnamon
2 tsp baking powder
1 tsp salt
½ tsp baking soda
225g unsalted butter, melted
230g sugar (*cake is sweet, may want to cut
down more)
4 large eggs
6 apples, peeled, cored, and sliced ½ cm thick
(may want to cut into small squares)

Preheat oven to 170°C. Coat bundt cake pan with some oil/butter.

In a medium bowl, whisk
together flour, cinnamon, baking powder, salt, and baking soda.

In a large bowl, melt the butter
in a microwave. Add in the sugar and mix well. Then add in the eggs (one at a
time) and whisk until smooth.

Gradually whisk in dry
ingredients just until combined (do not overmix). Using a rubber spatula, fold
in apples.

Spoon batter into a nonstick
Bundt pan, and smooth top. Bake until a tester inserted in cake comes out
clean, 55 minutes (square muffins: 25mins). Cool in pan on rack 15 minutes;
invert onto rack to cool completely.
Glaze (optional):
Whisk together confectioners' sugar and
enough water to form a thick yet pourable glaze. Set rack with cake over a
piece of wax paper (for easy cleanup); drizzle cake with glaze, and let set
before serving.
